Bugs for Breakfast

Content
“Great,” says Danhostel

Danhostel’s three city hostels Danhostel Copenhagen Amager, Danhostel Copenhagen City and Danhostel Copenhagen Bellahøj  have launched “Bugs for Breakfast.”

So, what is “Bugs for Breakfast?” It is an initiative to get people talking and to focus on another important source of protein, iron, calcium and zinc in our diet.

What can you expect on the “Bugs” menu? The hostels will start with 4 dishes:
• Super muffins with apple-apricot-almond and buffalo worms.
• Crispbread prepared with flour made from meal worms.
• Baked wax moth larvae.
• Chapulines - Mexican grasshoppers prepared with, for example, lime.

While the focus is on bugs, insects and worms, Danhostel will still provide a “normal” menu for those who have a difficult time eating something which is “different.”

Visit us at any of our three City hostels and experience what more than over 2 billion other people already know – that bugs are a super meal.

Here is one recipe you might like to try:

SUPER MUFFINS WITH APPLE/APRICOT/ALMOND AND LESSER MEALWORM FLOUR (Makes 12 muffins):
- 150 g lesser mealworm flour
- 300 g chopped almonds
- 375 g chopped, dried apricots
- 300 g dark brown sugar
- 180 g oatmeal
- 3 tsp baking powder
- 6 tsp cardamom
- 300 g graham flour
- 600 g plain white flour
- 225 g melted butter
- 9 dl milk
- 6 eggs
- 6 roughly grated apples

Blend the dry ingredients in a bowl.  Melt the butter in a casserole and add milk, eggs and the grated apples. Gently combine the ingredients – do not overmix. Line muffin pans with paper and divide the mix evenly.  Bake in a pre-heated oven at 175 degrees for 20 to 23 minutes. After 20 minutes, check the middle of the muffins using a clean knife.  If the knife comes out wet, bake for an additional 3 minutes.
